Tania Toscana, a Pecorino style cheese, is made with pasteurized premium sheep milk and a microbial rennet, making it suitable for vegetarians. The curd is pressed and bandage-wrapped and aged for a minimum of 6 months on pine slabs. While ageing, Tania takes on nutty caramel flavors and a rich cognac color. Tania Toscana won a Super Gold at the 2013 World Cheese Awards — one of less than 60 cheeses in the world to receive this distinction.
