Parsnips may just be my favourite root vegetable. Maybe it's their sweetness after a good frost, or their distinct nutty flavour - but I'm hooked. If you want to keep it straight forward so you can enjoy the parsnips in all their parsnip-y glory, then try roasting them. Or, if you are looking for your next favourite soup - cook them into a creamy parsnip puree soup with a drizzle of maple syrup.
