Massaman curry paste is one of the more unique Thai curries thanks to its Persian influence. It originated in the south of Thailand near the border of Malaysia and is a thick curry with a spicy, slightly sweet flavour. This paste is redolent with charred onion and garlic with hints of ancient spice such as cardamom and cinnamon.
Massaman curry classically has chicken or beef with chunks of tender potato, carrot and peanuts in a heady coconut milk base. Usual accompaniments are roti, paratha and a smashed cucumber salad. It can also be used to spice up your marinade for lamb and beef kebabs and even a Sunday roast chicken dinner.
