Fresh garlic, also called “uncured” garlic is harvested directly out of the ground and lacks the dried papery skin of typical garlic bulbs. This garlic has not gone through the process of drying its outer layer and so can be used without the extra work of peeling before cooking! And if you so desire, you can cure it yourself by leaving it in a cool dry place for longer storage use.
