Peribonka potatoes have thick russetted brown skin and off-white flesh. They are noted for being commerically grown for making french fries.

This cultivar, was developed in 1990 by the Quebec Ministry of Agriculture at Les Buissons Research Centre in Pointe-aux-Outardes, Quebec. It was released to the commercial market in 2002.

Note from the Farmers Market: Root vegetables are harvested by the local farms in the Fall and then stored in root cellars. It's difficult to know from the surface what is happening inside. John of Pinehaven Farm is a 3rd generation family farmer, growing an assortment of vegetables in the Millbrook area. He has been a lifelong farmers’ market vendor, carrying on a family tradition.  His specialty is potatoes – growing over 60 varieties.
