'Elgar' potatoes are oblong tubers with smooth yellow skin and a light yellow flesh. They can be mashed, roasted, fried, and baked just like any other yellow potato variety.
'Elgar' potatoes were bred by Peter Keijzer at the Fobek BV breeding station in Annaparochie, The Netherlands, from a cross between Y66-13-636 varietal and VE71105 varietal in 1987. This variety was released to the Canadian market in February 2009.
