Eva potatoes have buff, blemish free skin and white flesh that has a slightly mealy texture. The starch content makes this variety excellent for baking, mashing, french fries, and potato chips. They are medium sized and have a round-oval shape.
The Eva cultivar was developed by the United States Department of Agriculture's Agricultural Experimental stations in New York and Pennsylvania out of a 1989 Steuben cross. Released to consumers in 1999 (it takes about 10 years to develop a new cultivar!).
